White peas, commonly called white vatana or white peas, are produced by cutting the pea pods or, say, green peas when they are fully mature and then drying them and removing their skins, after which they are naturally split. On drying, the dark green color of the peas becomes white or slightly yellowish-white.
These dried peas are starchier, tougher with a more delicate flavor. Since green peas are not available throughout the year, white peas are a perfect healthy and nutritious replacement for them.
